The S-size Tuber melanosporum is a small
truffle, about like a hazelnut, that weighs between 5 and 10 grams. The
truffle's appearance and size depend on the time of year it gets harvested.
This variety is hunted during the months running from December to April.
The truffle will
reach you at optimum ripeness, it will be dark, black inside. If you cut
the truffle, you can see its small white veins. The black winter truffle is of
high quality, which is the reason it is highly valued among professional cooks
around the world. It has great culinary value, so you are sure to enjoy its
intense aroma, which lends a special touch to any dish. This fungus is
considered to be best when consumed fresh. The black truffle is used as a
condiment but can play a leading role in any dish since it is what gives that
special touch to whatever you're cooking. The S-size Tuber melanosporum can also be used to flavor food with truffle.
Its size makes it a suitable portion for a lunch or dinner for two people,
since 2 or 3 grams is the usual serving size. We suggest grating it finely to
create a puff of truffle shavings over your featured dish.
One Tuber
melanosporum fresh truffle (only available from November to March). Also
known as the winter truffle. Roundish shape depending on the structure of the
soil it gets grown in. Its color varies from brown to black, depending on the
ripeness. This is the most highly valued and appreciated kind for cooking
purposes, with a penetrating, delicate aroma; once tried, it is hard to forget.
They have
been hand-selected and cleaned, kitchen-ready. We strive to make sure the truffle
is perfect, but because it is a natural product that is hunted with the help of
dogs, it can occasionally get scratched, and a slight imperfection might be
seen. Do not worry, the quality of the product is the same!
The truffle
is sent vacuum-sealed with special moisture absorbing paper and packaged to
keep the cold chain unbroken thanks to an ice pack and protective cardboard
packaging.
Store
refrigerated between 1º and 5º degrees Celsius and consume preferably within 8
days. Preferably consumed fresh, requires no cooking.
